Heather and I just spent an hour watching this video on this lovely Black Friday morning, and I would highly recommend it to anyone who considers wheat "healthy" (which would probably be everyone). In this lecture, Dr. William Davis (cardiologist and author of Wheat Belly) describes in fascinating detail how wheat has changed genetically since humans started eating it thousands of years ago (the wheat eaten today ain't what the writers of the Bible were chomping on) and explores wheat's role in obesity, appetite stimulation, blood sugar spikes, and inflammation. I wish I had taken notes so I could really sell it to you and give it the glowing recommendation it truly deserves, but alas....
Suffice it to say, if you are overweight or suffer from joint pains, diabetes, bloating or water retention, high blood pressure, irritable bowel syndrome, fatigue, acid reflux, bipolar disorder, ADHD, restless sleep, or schizophrenia, watch this video when you have an hour to spare. Chances are good that everything you believe about wheat is wrong.
